- 2 small Zucchini, grated
- 2 tsp salt
- 3 tbsp Mediterranean Fresh Char-it Rub
- 4 scallions, minced
- ¼ cup parsley, chopped
- ¼ cup dill, chopped
- 1 egg, beaten
- ¾ cup Parmesan cheese
- ¼ cup flour
Grate 2 small zucchini into a colander over a sink; toss with 2 teaspoons salt and let it sit for 10 minutes.
Squeeze out the liquid and mix in a bowl with Mediterranean char-it, minced scallions, chopped parsley, chopped dill, 1beaten egg, parmesan cheese and flour.
Pan-fry spoonfuls of the mixture in a vegetable oil; flattening with a spatula, cooking or 3-4 minutes each side. Drain on paper towel and season with salt.
